Clear out all dirty dishes and transfer them to the dish pit.
Flip all pans on the line.
Clean all coolers/reach-ins/freezers inside and out with soapy water.
Replace any backups that are needed for the next day.
Using soapy water, scrub down tables, cutting boards, and any other equipment on the line that has been soiled throughout the day.
Filter and clean fryers inside and out. When finished, take apart the filterbox and clean it and leave out to dry.
Pull down hoods and run them through dish. Leave them out to dry to be put up in the morning.
Scrub flattop on all sides.
Clean pizza oven inside and out.
Pull all equipment out and sweep floors behind and down the entire line and prep area.
Take out all trash on the line and replace garbage cans with new liners. Take all trash outside to the dumpster.
After everything is done, take buckets of floor cleaner and water and throw them on the floor. Scrub every inch of the floor in the kitchen and squeegee excess water into the floor drains.
Mop your way out of the kitchen, this should be the very last thing you do therefore having noone walk on the clean floors.

Clear out all dirty dishes and transfer them to the dish pit.
Clear out any leftover food and trash.
Flip any pans on the station and put away any sauces, pickles, bottles, etc.
Using soapy water, scrub down the expo line and tables on that side.
Empty trash cans on the expo side and replace with new liners.
Take a bucket of floor cleaner and water into the walk-in cooler and dump it on the floor, scrub and squeegee the water out and leave to dry overnight.
When finished, proceed to help in the dish pit with either washing or putting dishes away.

Clean all dishes and glasses that come back to the dish pit.
Make sure to place dishes on the drying racks before putting them back in their corresponding spots.
Make sure to keep an eye on the quality of the dish water during cleaning. If it gets too soiled, drain the dish machine and refill it before continuing.
Once all dishes are done, clean out the inside of the dish machine and run delimer through it. Once finished, run the dish machine on a rinse cycle to make sure the chemicals are washed away.
Drain the dishmachine and turn it off, wipe off the dish table and put all dish racks away neatly.
Empty the dish pit trash and replace it with a new bag. Take trash out to the dumpster.
Taking buckets of floor cleaner and water, dump them on the floor in the dish pit area and scrub the floors.
Squeegee the water into the floor drain and then mop over the entire area.
Proceed to help out anywhere else until everyone is finished.

Turn off all TV’s
Clear off any trash from tables as well as any glasses and take them to either dish or the bar.
Using sanitizer water, clean off all tables and chairs allowing to air dry when finished.
Check all bathrooms to see if paper towels, toilet paper, or soap needs to be refilled.
Clean the sinks and mirrors and scrub the toilets inside and out.
Sweep all the floors in the dining area, bathrooms, and up by the cashiers station.
Take out all the trash in the dining room/bathrooms and replace all cans with new liners.
Wipe down the cashiers station and all terminal screens/handhelds.
Make sure anything that needs to get charged is plugged in (tablets, handhelds, phones, etc.)
When finished, mop the bathrooms and then mop your way out of the dining room into the kitchen.
Proceed to help anywhere needed in the kitchen.
